Considering that the last time I took a hard science class was when I received a C-plus in high school chemistry, believe me when I tell you I had trouble keeping up. Luckily, the exam we will take in a few weeks — to receive our course certificates — will be open-notebook, and we are provided a glossary and all the pages of Jacobsen’s PowerPoint presentation.
Wine professionals, unsurprisingly, bristle at the way in which the word “sommelier” has been co-opted by other industries. “ ‘Sommelier’ is now a widely abused term,” said WSET’s Wrigley. Still, Wrigley allowed, diplomatically, that in the wider connoisseurship of food and drink “all education is good as long as it comes from a good source and is of good quality.”
A gourmet store will often stock ingredients of the highest quality from around the world. They often develop special contacts in order to import and sell foods that are not readily available in their area otherwise. You may be able to work with the store to acquire ingredients by request. In addition, such stores often stock equipment needed to prepare gourmet dishes.
We all know the only thing better than a standard hand-tossed pizza crust is a stuffed crust. We flavored this cheesy ring of bready glory with a seasoning blend inspired by the masters—Domino’s—and served it up with a delicious blend of the two most perfect crust dipping sauces: ranch and marinara.   Get the Recipe: Cheesy Stuffed Pizza Crust Ring How to Make Lasagna Dip with Pasta Chips How to Make French Dip Pizza
You can make this one pot chicken parmesan pasta in any large skillet or pot, but I always make it in my enameled dutch oven.  When I’m stirring the pasta as it cooks, I don’t want to be worried about the liquid slopping up and over the sides.  I’m a messy cook, but no one likes to clean up burn on sauces from their stovetop!  If you don’t have a dutch oven, you can use a deep sided skillet, or a stock pot… but I highly recommend picking up a dutch oven, they have so many uses!!
When you’re losing steam after a long day out with your family and need a snack and a drink to hold you over until dinner, head to Cocina 214 in Winter Park for Happy Hour. This Tex-Mex spot serves 12 types of margaritas and lots of things that are perfect for a small pre-meal, like tacos, queso fundido, and fried avocado bites. And if you don’t feel like relocating to another spot after a few drinks, the burritos and tamales should help hold you over until breakfast.
Clean, modern lines meld with Spanish sensibility " colorful tiles and a convivial, festive vibe " at this fountain-bedecked enclave in Winter Park, where deliciousness comes in many flavors, spanning salty meats to sugary churros and a range of succulent in-betweens. Diners here most often go tapas-style, choosing myriad plates from which all can partake, enjoy, discuss. That's not to say for a moment, however, that the large plates " from steamy, seafood-laden paellas to succulent short ribs to Spanish-influenced pub burgers. Good stuff. Bulla, by the way, is pronounced "boo-ya," which is precisely what you might say when your teeth sink into its delicious, little cod fritters, or you take your first sip of Rioja on its airy, open patio.

Fine dining and Disney haven’t always gone hand-in-hand; the first restaurant you might associate with Mickey Mouse and co probably has a giant yellow ‘M’ towering above it or a certain Colonel Sanders plastered on a billboard outside. Victoria & Albert’s, however, flips this now out-of-date stereotype on its head, offering the polar opposite of the old-school Disney fast food joint. This is the sort of place where reservations need to be made weeks in advance, you won’t get in without a dinner jacket, and six or more courses from their modern American/French-inspired menu (with wine pairing) will probably set you back the price of a couple of tickets into the park for the day. Orlando is not yet on the Michelin team’s radar, but Victoria & Albert’s has long been recognized as one of Florida’s best restaurants, having been awarded the prestigious AAA Five Diamond award every year since 2000. This is a terrific reimagining of the classic dish.  I struggled with the pasta cooking and may cook the pasta at least 3/4 of the way through separately, but otherwise it’s a winner.  I used two chicken breast halves which I flattened a bit, cooked flat, then cut up and cooked the rest of the way.  I love breading on the chicken, but it’s very nice like this without – what a time saver and calorie saver.
Why go: Take Cheena is for adventurous eaters. Flavors hail from all over Asia but are served in American style. Ever had a Korean beef empanada or an Indian butter chicken burrito? Definitely try the “JapaDog,” featuring Chinese sweet sausage, avocado-wasabi, fumi, cabbage mix and scallion. Just remember that you won’t find any yellow mustard here.
Bring your friend's dreams of living in a villa in the Italian hills one step closer with this gift, which supports olive producers in Italy's Puglia region. The kit comes with a 3 liter tin of fresh, organic, single-harvest olive oil as well as a ceramic carafe and funnel, plus another 3 liter shipment every three months for a year to encourage ample EVOO usage.

Lalousis had been managing Maille’s retail boutique in London when he was tapped for his expertise. “My boss told me, ‘I think you’ve got a calling. You’ve got a love for mustard.’ ” He was sent to the factory in Dijon for six months of training and learned “everything there was to know about mustard.” As far as Lalousis is aware, he’s the only mustard sommelier in the world. That’s not to say, however, that he is the first mustard sommelier in history. “We had a mustard sommelier in 1747 when we opened a store in Paris,” he says. At that time in Paris, Dijon mustard was not well known. “Our founder wanted people to know how to use Dijon mustard. He wanted to show people that it was an ingredient and not just a condiment.” And if Lalousis has his way, he will not be the last. He’s developing an educational program that will certify future mustard sommeliers about types of mustard seed, harvest techniques, chemical compounds in mustard, regional differences, levels and qualities of pungency, various pairings and uses, and what Lalousis calls “the culture of mustard.”
With its gorgeous, luxurious decor, marble features and portfolio of culinary accomplishment, Victoria & Albert’s is nothing short of magical – its location in Disney’s Grand Floridian Resort & Spa only confirming this status as a fairytale destination. Modern American cuisine combined with the highest quality ingredients from around the world – including Italian truffles and Japanese beef – gives rise to mouthwatering specials. These include the Colorado bison served with caraway seed vinaigrette, or the Alaskan king crab ‘jar’ with Siberian caviar. It’s no wonder that Chef Hunnel and his team have received nothing but rave reviews and top awards, including the AAA’s prestigious Five Diamond Award. Jackets are required, so dress up rather than down for a dinner at this classy establishment.

Whip up a little something special on slow weekend mornings with our selection of breakfast items.Croissants and pastries make the perfect complement to tea and coffee. Flaky, buttery crusts melt in your mouth, exploding into tender flakes of flavor. Drizzle each one with one of our homestyle jams, jellies or preserves and dust with icing sugar for a sweet morning treat, or serve alongside fresh pancakes made with our pre-mixed breakfast mixes instead. It’s a Sunday morning smorgasbord crafted with care from a single collection.

While exemplary fine dining can be found throughout the Disney compound, none surpass the level of service delivered during a Victoria & Albert's prix fixe, seven-course meal that can only be described as a top-of-the-line culinary experience. Meals here are an event, whether served in the elegant dining room or, if intimacy and knowledge of the kitchen's inner-workings are more your game: the Chef's Table. Here, six guests will dine in the kitchen alongside the chef himself, learning the ins and outs of running a AAA Five-Diamond restaurant as they dine on up to 14 courses. Unless you're a regular on "Lifestyles of the Rich and Famous," Victoria & Albert's is an eatery probably best reserved for very special occasions, but meals here, and the service with which it comes, are guaranteed to become memories that will last a lifetime.

Then I learn about the American Cheese Society’s T.A.S.T.E. Test, which launched in the summer of 2018. Passing this exam will confer the title of Certified Cheese Sensory Evaluator (cheese sommeliers don’t call themselves sommeliers). Cheese feels like something I can handle. I’d recently spent time on assignment for The Washington Post in Bra, Italy, reporting from the Slow Food cheese event, tasting from among 300 cheesemakers from 50 countries. The founder of Slow Food declared the event to be “the beating heart of cheese” and those of us attending the “cheese intelligentsia.” Well, as a member of the cheese intelligentsia, surely I can pass the T.A.S.T.E. Test.

Part art deco bakery, part homage to Alice In Wonderland, The Glass Knife is a new spot in Winter Park that serves just about every sweet you can imagine, from pistachio orange donuts to a chocolate raspberry tart. Each of their baked goods is decorated by hand and you’ll likely see a lot of people taking photos of their desserts. However, if you come with someone who isn’t really into sweets, this place also has a full brunch and lunch menu with things like breakfast sandwiches, salads, and flatbreads available for the savory-only people in your life.
Why go: Hamilton’s Kitchen, named after the late and beloved Hamilton Holt (8th president of Rollins College), is a nod to the philanthropist's love for hosting guests from all over the world. Appropriately located in the Alfond Inn, Hamilton’s Kitchen donates profits to the Hamilton Holt scholarship foundation for students attending Rollins College.
Pate is a spread made from meat or vegetables, along with other base ingredients such as herbs, spices or alcohol. Pates are typically baked in a crust or molded in a terrine. The ultimate pate is Pate de Foie Gras, which is a spread made from the fattened livers of duck or geese. Pate may be served hot or cold, is tends to develop its best flavor when chilled. Pate is generally attributed as a French Gourmet Food, but in actuality found its roots thousands of years ago in ancient Greece.
Searched for a recipe for stuff I had in the kitchen so I didnt have to go to the store. I came across this recipe. I only had a can of Hunts Spagetti Sauce in the cupboard so I was worried how it would turn out (we prefer Ragu). I shouldnt have worried because it turned out delicious!! I added a little more of the seasonings and a bit of sugar to the sauce. So yummy and kid approved. Thank you for a great easy meal!!
Chef Xiong ‘Tiger’ Tang impressed as the executive chef of Zen at the Omni Orlando Resort, but at his West Colonial Drive (Orlando’s unofficial Chinatown) restaurant, he downright dazzles with wickedly infernal dishes highlighting the cuisine from Sichuan Province, the capital Chengdu in particular. A more gratifying lobster – hacked, reassembled, then adorned with an alluring mix of chilies, peppercorns, garlic and cilantro – won’t be found in this town, while lamb sautéed in hot pepper sauce wrapped in tinfoil, and a Chongqing-style hotpot with head-on shrimp, tripe, beef and fried fish mixed with crunchy lotus root and cauliflower are electrifying choices for the capsicum-deprived.
I opted to omit the breading here… to save calories, recipe steps, and to keep the ultra creamy consistency.  If you really need that breading crunch, you could add some toasted Italian panko breadcrumbs to the top of the dish.  Of course, you could always bread some chicken tenders and cook them before laying them on top of the pasta, but that defeats the whole “one pot” idea 😉
The Sanctum really does feel a little sacred in the way they do things; its beautiful plant-based plates are colorful and fresh and alluring. And while there are loads of options for the vegan members of the populace, this place isn't that strict you'll also find eggs and cheese on the menu in places. Grain bowls and salads, sammies and pasta populate a menu that holistic practitioners would likely tout. Delicious juices and smoothies tempt those looking for goodness by the glass. Breakfast/brunch is exceptional, whether you like your avocado toast animal-free or feel like topping it off with a couple of organic eggs.

I’ve been confined to my bed for the past few days with the flu. My 14 year old daughter has picked up the dinner duties in my absence. Tonight she made this recipe & it was a hit! She said one of her brothers & my husband got seconds & her other brother who is always the last to finish his food was done first! Thank you for sharing this one pot meal, 5 stars here!
Local restaurateurs Johnny and Jimmy Tung (Sticky Rice, Chela Tequila & Tacos) continue Bento’s wayward expansion with the latest outpost opening inside the revamped Centre of Winter Park. Bento’s gleaming interior comprise the du rigueur components of today’s modern restaurant, and patrons appear to be dazzled by it as much as the menu. A pan-Asian free-for-all of sushi rolls, rice/noodle/poke bowls, soups and, of course, bento boxes is really no different than any other Bento, but the newness of its presence in Winter Park has gastronomes agog.
Eater editors get asked one question more than any other: “Where should I eat right now?” Orlando dining obsessives want to know what’s new, what’s hot, and what favorite chef just launched a new spot. So here they are – the fresh faces on our ever-evolving restaurant scene; the newish spots setting tongues awagging from the theme parks to downtown Orlando to the city’s suburban enclaves and all the neighborhoods in between.
I went to Whisk today after working out and thought I'd treat myself with Toasted Cornbread ($6) and a Adobo Grilled Chicken Sandwich ($17), as well as a Diet Coke ($2.50, for a can). The Toasted Cornbread had three large pieces, but unfortunately the first piece I touched was cold. Mistakes inevitably happen, so it was no big deal and so I told my waiter. He apologized, took the plate and asked me if I'd like another order, which I did because of the workout lol. The second batch of cornbread however still missed the mark. The problem with heating up cold stored corn bread is that it can dry up unless you heat it the correct way. The corn bread was unfortunately dry and crumbled at the touch, lacking the texture you'd hope. The flavors were there however for classic corn bread.
We're in the thick of winter, and soups aren't going anywhere. There's only one thing that goes better with soup than crusty bread, and that's the Instant Pot, which shaves off hours of prep time without sacrificing any of the flavor. No matter your base ingredient—beef, squash, beans, pork, you name it—your favorite reliable appliance will turn out fantastic soups and stews every. single. time.
The Ravenous Pig was pretty much the first to bring the term "gastropub" into the Orlando foodie lexicon. Since it opened its doors, the city's dining scene has swelled to epic buzzworthy proportions (and the restaurant has swelled past its original location and moved into bigger digs on Fairbanks). Local is king here; a rotating food and craft cocktail menu features ingredients grown, raised and made by Florida purveyors. A few dishes are mainstays, but the rest change up with regularity, leaving diners to wonder what delights they may find when they venture in. Oxtail stroganoff over tagliatelle? Pot-au-feu? Could be. If not, another fresh-made creation is sure to please. Come thirsty, as well. Rotating taps feature phenomenal craft beers including those of its own in-house brewing operation, Cask + Larder.

Marchese tells me that when she detects a metallic taste in the honey, she knows the beekeeper has likely used rusty equipment. When she tastes too much smoky flavor, she knows the honey came from an inexperienced beekeeper who uses too much smoke because he’s afraid of bees. Which is to say Marchese’s palate is so finely tuned that she can literally taste the beekeeper’s fear in a smear of honey.

Located in Winter Park, part of Orlando’s sprawling suburban area, Ethos Vegan Kitchen does exactly what it says on the tin: serves up ethically sourced, vegan food while showcasing the potential of vegan cooking. Working with environmentally conscious local farmers and producers, and using organic ingredients as much as possible, the restaurant has built up a loyal following in the area. No wonder – it offers anything from pastas and pizzas to salads, sandwiches and mains, with a menu that is both tantalizing and rewarding, and which features regularly changing specials. Beer lovers will not be disappointed either, as Ethos Vegan Kitchen has sourced several high-quality organic brews to pair with any meal option.

Indeed, what the rise of specialized taste education, the cult of sensory analysis, and the wine-ification of everything means is that taste is becoming more and more codified all the time. There are good tastes and bad tastes; not only that, there’s a growing caste of gatekeepers in every field who are keeping score on what tastes great, middling and flawed. Maybe this is what morality or philosophy looks like in an increasingly post-religious, post-intellectual, materialistic United States. We are a people in need of an authority, a higher voice, some guidance — even if it comes from behind the cheese counter. Maybe, for many affluent Americans, the sommeliers of everything represent something shaman-like. Listen to me. I am your one true sommelier.

There aren’t many good food options around Sand Lake Road, the tourist-y strip near Universal Studios. However, Rocco’s Tacos and Tequila Bar is trying to change that. There’s nothing mind blowing going on here, but the tacos, Texas-style queso, and specialties like chile rellenos and mole poblano are all better than anything else in the area. They also have a great late-night menu for when you get hungry again after sampling from their wall of tequila, which includes more than 400 varieties.

Lake Nona’s burgeoning food and beverage scene continues to progress and this pizza joint with showcase brewery by the Tavistock Restaurant Collection (who also operate Lake Nona’s Canvas and Chroma restaurants) is one luring downtowners to the airport-area enclave. With head brewer Marco Reyna tapping 12 sudsy creations, there’s no shortage of pie-pairing quaffs. Jason Bergeron (who also serves as executive chef of Canvas and Chroma) fires up pizzas in two gorgeous wood-burning ovens – pizzas like the infernal “Pepperoni Picante” and the “Awesome Saus!” with sausage and elephant garlic. It’s one worth riding the bus to Lake Nona town for.

But customers’ favorite choice when eating here would be the Burgushi. It’s the perfect combination of sushi with a burger. Options for the Burgushi are Doug's Filet Roll, "The Prime Time" Filet & Lobster Roll, and many more. You can also build your very own sushi roll. Not many restaurants give you that option, that's why The Cowfish Sushi Burger Bar is one of the best restaurants in Orlando and one of the best burger joints in America.

I’m embarrassed to admit it to Marchese, but I’m exactly the type of consumer who keeps a plastic teddy bear in the pantry. As we taste a strange, dark buckwheat honey, with flavors like malty beer and pumpernickel and intensely funky, barnyard aromas — “horse blanket,” she says — the world of honey suddenly seems vast and overwhelming. Yesterday, I didn’t give honey a second thought. Today, I need to know everything.

Since I just spent a year writing a book about cider, the first credential I seek out is to become a Certified Cider Professional (or CCP), a brand-new professional title created by the United States Association of Cider Makers. I attended an introductory seminar on the CCP Level 1 exam at CiderCon in Baltimore in the winter of 2018. The following summer, one afternoon on a whim — without any further study — I decide to log in to the cider association website, pay $75 and take the exam. There are 60 questions on apple history, apple classifications and genetics, cidermaking techniques, styles of cider, detecting flaws, and food pairings with cider. I submit my answers, then find out instantaneously that I’ve gotten 89 percent correct — a passing grade. It has taken me 37 minutes 47 seconds to complete the exam, which includes the interruption of a 15-minute work call. I am now proudly a Level 1 Certified Cider Professional — a cider sommelier. I receive a felt CCP patch in the mail — one that I might have proudly ironed onto my acid-washed jean jacket back in the ’80s. Within months, I am teaching cider classes to candidates who also hope to pass the CCP Level 1 test.
Chef Shuichi Tanida left his post at Epcot’s Mitsukoshi restaurant to open a downtown ramen shop (appropriately dubbed “The Ramen”) in the former Philly Connection space and the soup cognoscenti have caught on. The broths, be it tonkotsu, shoyu or miso are unquestionably legit and there’s even a vegan ramen offered. The soup-averse can give any of the donburi (rice bowls) or bento boxes (with choice of karaage, panko-fried chicken tender, or potato croquette) a go but, really, it’s all about the ramen at The Ramen.
