I am not ready to admit how effortlessly I attained this certification until, one evening, I find myself at Anxo Cidery, the epicenter of Washington’s cider scene, in Northwest D.C. Anxo required all of its front-of-house staff to become CCPs, and I am chatting with two bartenders about how I’ve passed the exam. They both also recently passed. “That exam was so easy,” one bartender tells me. “I took it when I was drunk.”

There's a word we want to use about Domu's phenomenal curry ramen (the other varieties are palate stunners, as well) but we're not sure how to spell that noise Homer Simpson makes when he is particularly food-enthralled. Ramen, the bowls are definitely shareable, and an array of beautifully plated pan-Asian offerings are what all the fuss is about at Domu, and the fare is definitely fuss-worthy. You can level-up your bowl with adds on including fried chicken thighs and braised pork belly, or skip the soup and go for some crispy wings or the "cheezus," a gloopy-wonderful cheesy bowl comprised, in part, of melted mozzarella, mayo, fresh roasted corn and Japanese spices.
But customers’ favorite choice when eating here would be the Burgushi. It’s the perfect combination of sushi with a burger. Exposed brick, twinkly lights and some patio seating on Park Avenue give the place a cosmopolitan feel. Prato's menu pulls on classic Italian for inspiration but pays due diligence to culinary evolution, allowing for creativity and some turns that might surprise you. Half-portions on most of the pastas allow for a more authentic Italian experience (pastas are often served in small portions before entrees in the Old Country) and offer more opportunities to share and sample.

After that, we move hotter. A yellow one from Scotch bonnet peppers that’s about a six, a delicious Barbados-style pepper sauce made with mustard and having a molasses-like taste, a barbecue-style sauce from San Antonio made with ancho and morita peppers, a spicy peanut butter made from a traditional Haitian recipe, and a floral, fruity habanero sauce from Japan made with Citra hops and a bit of mango. After a half-dozen sauces, my palate becomes pretty fatigued. “If you push yourself past your comfort level, your brain’s not going to care about the taste,” Chaimberg says.
MEAT. It's what's for dinner (and breakfast, brunch and lunch) at this Mills 50 mecca of all things carnivorous. Grass-fed beef, pastured pork, goat, lamb, eggs, you name it - all of it locally sourced - is what goes into dishes like the Sloppy Jehosephat (loose beef and cheddar on a French roll), the arugula-and-cheddar-laden Crushinator breakfast sammich ("No, Pa! I love him!") and a medium-rare burger that the whole of Orlando's meat-eating community has unanimously raved about. Orlando Meats is open for all three squares; the breakfast menu features some creative spins on traditional offerings, but serious carnivores can order up that signature burger at 8 am if their lovingly clogged hearts so desire. Other delights, including sippable beef or chicken bone broth and house-made doughnuts, are also worth the visit.
You can make this one pot chicken parmesan pasta in any large skillet or pot, but I always make it in my enameled dutch oven.  When I’m stirring the pasta as it cooks, I don’t want to be worried about the liquid slopping up and over the sides.  I’m a messy cook, but no one likes to clean up burn on sauces from their stovetop!  If you don’t have a dutch oven, you can use a deep sided skillet, or a stock pot… but I highly recommend picking up a dutch oven, they have so many uses!!
